I'm sure it won't take long before the excitement level dies down a bit, at least with zuchinni, but for now we are thrilled!

Any great zucchini recipes? Ours have been prolific the last two weeks... four loaves of zucchini bread, a huge batch of fried zucchini fritters, several dishes of sauteed squash... and I still have 10 lbs in the fridge to do something else with! Grilled zucchini sandwiches, zucchini brownies...?
We have a good one for a zucchini bake with Bisquik (which I would like to replace with a homemade mix). I'll post a recipe soon, we serve it with a slice of tomato and feta on top....yum!
If you find a recipe for zucchini brownies let me know :)
